Southwest Pasta Salad

Ingredients

  • 2, zest from limes
  • 1/2 lb bow tie pasta
  • 1 can (14 oz), drained and rinsed black beans
  • 3/4 cup, halved cherry tomatoes
  • 1, seeded and diced bell pepper
  • 1/2 cup, sliced green onion
  • 1/2 cup, frozen, fresh corn
  • 8 oz, diced, cooked chicken
  • salt
  • pepper
  • lime wedges

Instructions

Zest limes and place zest in a large salad bowl.

Place cooled, cooked, drained pasta in large salad bowl with lime zest. Add beans, tomatoes, pepper, green onions, corn (no need to thaw), and chicken. Toss with dressing. Season with salt and pepper, to taste. For best results, chill 1 hour before serving. Right before serving, sprinkle cheese on top. Serve with extra lime wedges, if desired.
