1. Preheat oven to 450 F. Line a baking sheet with aluminum foil and brush oil over the foil. Set aside.
2. Beat egg lightly in a shallow dish (use another egg later if you need to). Combine flour, seasoned salt, pepper, and paprika in a separate shallow dish. Set aside. Combine panko and regular bread crumbs in a third shallow dish. Set aside.
3. Cut fish into sticks 3-4 inches long and 1/2-1-inch wide.
4. Working with a few pieces of fish at a time, dredge fish first in flour and then shake off excess. Then dip each piece in beaten egg and then in the bread crumb mixture. Make sure all sides are well coated with bread crumbs and then place fish on the baking sheet.
5. When all pieces are on the baking sheet, place in oven and bake bout 10 minutes. Cool a few minutes and then serve with Tartar Sauce for dipping.
