Ingredients

  • 2 cups white rice
  • 2 cups coconut milk
  • 2 cups water
  • 1 tsp salt
  • 1 tsp white vinegar
  • 2-3 tsp sugar
  • 1 tbsp butter
  • 2 cups, diced mango
  • 1/4 cup, chopped cilantro
  • 1/2 cup, sliced green onion
  • 1/4 tsp black pepper

Instructions

1. Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil.

2. Turn heat to low and cook over 20 minutes or until most of the liquid is absorbed. Allow to stand 5 minutes

3. Add butter, mango, parsley or cilantro, green onions, black pepper, and additional salt, to taste.
